Honduras : Important shrimp production

Shrimp exports maintain growing trend

The shrimp farming industry is going through a good time in Honduras, in terms of shrimp production and exports. So, according to preliminary figures from the National Association of Aquaculturists of Honduras (ANDAH), up to October of this year 52 million pounds of shrimp had been exported, 29 per cent more than the volume exported in the first ten months of 2016. Then, this year's figures are better than those observed in recent years. According to ANDAH reports, in the first ten months of 2013, 41.3 million pounds were exported; in the same period of 2014, 47.3 million was sold abroad; in 2015 the exported volume fell to 37.4 million, and in 2016 it increased to 40.4 million. In fact, the association attributes this growth of sales abroad to several factors, among which it mentions an improvement in productivity and weather conditions that have prevailed this year. The outlook for the last two months of 2017 are encouraging, according to ANADAH President Víctor Wilson, who projects that between 10 and 15 million pounds could be exported in the last two months of this year.

Risotto, scallops and Gambas

Preparation time : 30 minutes

Cooking time : 30 minutes

Ingredients :

(for 4 )

  • 300g risotto rice
  • 16 scallops
  • 16 prawns
  • 2 onions
  • 100g of butter
  • 80cl chicken broth (2 cubes of broth + water)
  • 10cl of white wine for cooking
  •  Parmesan cheese
  • Salt, pepper

Recipe preparation :

Here are the different steps to follow in order to make your risotto, scallops and prawns a success.

Step 1:

Chop the onions and prepare the broth with the cubes. Then reserve.

Step 2:

cook scallops and prawns in butter. Then reserve

Step 3:

In a frying pan, brown the onions, then when they are cooked, add the rice.

Step 4:

Once the rice is translucent, add the wine and lower the heat. Once the wine has been absorbed by the rice, add a ladle of broth. Once the absorption is complete, add a second ladle. Continue until the broth is exhausted.

Step 5:

Season with salt, pepper and Parmesan cheese

Step 6:

Add scallops and prawns and serve. Enjoy your meal !
